#DisneyMagicMoments: Meet Phoenix, the Zebra Foal Born at Disney’s Animal Kingdom Lodge

On May 6, the animal care team at Disney’s Animal Kingdom Lodge welcomed a new female Hartmann’s mountain zebra foal to the herd. I’m so happy to share with you photos of little Phoenix as she recently made her first appearance on the resort’s Sunset Savanna.

The name Phoenix was chosen by our team as a symbol of strength and renewal. Phoenix was born to mom Peebles, and she’s already quite active and enjoying bonding time with her mother. This is the second Hartmann’s foal born at Disney’s Animal Kingdom Lodge this year.

Phoenix was born as part of the Species Survival Plan program, overseen by the Association of Zoos and Aquariums. The program ensures responsible breeding and genetic diversity of thousands of animal species. As part of this program, Phoenix is the fourth zebra born at Walt Disney World this year, and 13th overall since we began participating in the breeding program.

Please join me in welcoming Phoenix to our Disney family, and follow along on Instagram for more on #DisneyAnimals and our animal care team. We look forward to you seeing her real soon!

If You Haven’t Tried This Chocolate Soufflé, You’re Missing Out!

Now more than ever, we’re looking for ways to bring the magic of Disney into your home. We recently brought you a virtual viewing of one of our most popular Broadway-style shows, and in today’s installment of #DisneyMagicMoments, we are showcasing one of my personal favorites – Palo!

If You Haven’t Tried This Chocolate Soufflé, You’re Missing Out! Chocolate Soufflé at Palo

The Italian-inspired  Palo restaurant  aboard each  Disney ship offers a superlative dining experience reserved exclusively for adults. Guests are invited to indulge in a menu of delectable modern Italian cuisine, coupled with a sophisticated atmosphere and superior service. But while Palo may be reserved for adults, here is a way to bring a taste of this experience to the entire family – make your own chocolate soufflé at home!

Palo Chocolate Soufflé
Serves 6

Ingredients

  • 3 tablespoons butter, plus more for greasing the soufflé cups
  • 6 tablespoons sugar, plus more for dusting the soufflé cups
  • 1 cup milk
  • 3 tablespoons all-purpose flour
  • 3 tablespoons Dutch-processed cocoa
  • 2 ounces (2/3 cup) semisweet or bittersweet chocolate, melted
  • 4 eggs, separated
  • Vanilla Sauce (recipe follows)

Directions

  1. Preheat oven to 350°F.
  2. Set a full kettle of water on to boil.
  3. Butter six 4-ounce soufflé cups and coat with sugar; set aside.
  4. Bring the milk to a boil in a small saucepan. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with a whisk to a smooth, paste-like consistency. Reduce heat and cook for 1 minute.
  5. Slowly add the hot milk, whisking until smooth, then blend in melted chocolate. Let cool for 5 minutes, then stir in egg yolks.
  6. Beat egg whites in a separate bowl until frothy. Slowly add sugar, 1 tablespoon at a time, until stiff, glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined.
  7. Pour the batter into prepared soufflé cups. Place cups in a large baking dish and add enough boiling water to reach halfway the sides of the soufflé cups.
  8. Bake for 20 minutes. Serve immediately, with warm vanilla sauce.

Vanilla Sauce

Ingredients

  • 1 1/4 cups heavy cream
  • 1/4 vanilla bean, split lengthwise
  • 3 tablespoons sugar
  • 2 small egg yolks

Directions

  1. Bring cream and vanilla bean to a low boil in a saucepan over medium heat.
  2. Combine sugar and egg yolks.
  3. Add 2 spoonfuls of boiling cream to egg mixture and stir well, then pour back into the remaining cream and continue to cook over low heat, stirring constantly for 3 to 4 minutes.

Of course, the dining experience at Palo doesn’t end with the fine cuisine. Palo is also home to a robust menu of adult beverages, including inventive cocktails and classic reserve wines. The restaurant’s wine list, with 99 percent Italian wines, includes about 90 labels from all regions of Italy, including a sparkling Prosecco, a lush red Barolo made just for Palo, and some of the best Super Tuscans.

One of my favorite beverages at Palo, especially paired with brunch, is the restaurant’s signature Balsamic Grande cocktail. This refreshing drink features vodka, a splash of 5-year-old balsamic vinegar and fresh muddled strawberries. Check out this video to see how you can make it at home.

Stay tuned for more behind-the-scenes stories, recipes and other #DisneyMagicMoments coming your way from Disney Cruise Line on the Disney Parks Blog!

Disney Dreamers Academy Alumni Make a Difference During Pandemic

Each year 100 high school students from across the country are selected to come to Walt Disney World Resort and participate in Disney Dreamers Academy with Steve Harvey and ESSENCE. Every student comes with an inspiring story, and throughout the four-day mentoring program they are encouraged to make a difference in the lives of others. So, during these challenging times, it is no surprise, that Disney Dreamers are out doing their part to help. Two of those making a difference include Ashlyn Pinkins of Gretna, Louisiana and Kaylin Garnett of Augusta, Georgia. Here are their inspiring stories.

Tracking the Virus

Ashlyn attended the 2011 Disney Dreamers Academy with a love for science.  Now she has fulfilled one of her dreams and is a public health epidemiologist for her home state of Louisiana.  Ashlyn has the critical role of documenting and tracking cases of the virus using information gathered from hospitals and other medical organizations.

“It’s just been so informative and inspirational to see how much people push forward and how much work they actually do,” said Ashlyn. “To get a firsthand account of the work people are doing in the background is just amazing.”

Ashlyn reflected on her time at Disney Dreamers Academy, saying, the experience showed her that no dream is out of reach as long as you keep working hard.

Caring for the Sick

2016 Disney Dreamers Academy alumna Kaylin always had a passion for helping others. She has continued to chase her dreams earning her Bachelor of Science in nursing, while also working as a certified nursing assistant and unit manager at a local nursing home.

Kaylin was assigned to care for and manage administrative duties specifically for COVID-19-positive patients. There she saw firsthand the impact healthcare professionals made.

“This experience has confirmed that being on the frontlines to help others is what I want to do in life,” Kaylin said. Her efforts over the last few months have helped contain the spread of cases at her facility.

Although her work has been as challenging as ever, Kaylin’s desire to help others inspired her to pursue her goal of becoming an emergency medical technician (EMT), having recently passed the exam while still working.

Kaylin credits Disney Dreamers Academy for teaching her the value of teamwork and inspiring her to never give up on her dreams.

Disney Dreamers Academy with Steve Harvey and ESSENCE is a four-day, transformational mentoring program for teens that has taken place at Walt Disney World Resort in Florida annually since 2008.  Each class of 100 teens is encouraged to “Be100,” to be positive and “all in,” and to pursue their dreams and make a difference in the lives of others.
