Ingredients

  • Batch of chilled sugar cookie dough (homemade or store-bought)
  • Flour
  • Rolling pin
  • Wax paper
  • Baking sheet
  • Cooling rack
  • Kitchen knife
  • White cookie icing
  • Candy necklaces or other small candies
  • Colored sugar (optional)
  • Food decorator pens (optional)

Helpful Tip

If the store-bought brand of dough you use is too soft to hold the cookie shapes during baking, you can knead in a little extra flour to stiffen it before rolling it out.

Directions

  1.  Print the template from the Disney Family website and cut it out. Roll out the dough on a floured surface to 1/4-inch thickness, then use the template and a knife to cut out mermaid tail cookies. Bake the cookies according to the recipe directions and let them cool.
  2.  Working with one cookie at a time, spread cookie icing on the tail fin. Then spread more icing on a 2-inch section of the tail just above the fin and gently press candies into it, arranging them close together to resemble scales. Continue frosting and decorating the rest of the tail a section at a time until you reach the top. Or, you can simply sprinkle colored sugar on the icing in place of the candy.
  3.  Set the cookies aside until the icing hardens. Then use food decorator pens to embellish the tail fins with colorful lines, if you like.

Palo Chocolate Soufflé

Ingredients

  • 3 tablespoons butter, plus more for greasing the soufflé cups
  • 6 tablespoons sugar, plus more for dusting the soufflé cups
  • 1 cup milk
  • 3 tablespoons all-purpose flour
  • 3 tablespoons Dutch-processed cocoa
  • 2 ounces (2/3 cup) semisweet or bittersweet chocolate, melted
  • 4 eggs, separated
  • Vanilla Sauce (recipe follows)

Recipe

  1. Preheat oven to 350°F.
  2. Set a full kettle of water on to boil.
  3. Butter six 4-ounce soufflé cups and coat with sugar; set aside.
  4. Bring the milk to a boil in a small saucepan. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with a whisk to a smooth, paste-like consistency. Reduce heat and cook for 1 minute.
  5. Slowly add the hot milk, whisking until smooth, then blend in melted chocolate. Let cool for 5 minutes, then stir in egg yolks.
  6. Beat egg whites in a separate bowl until frothy. Slowly add sugar, 1 tablespoon at a time, until stiff, glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined.
  7. Pour the batter into prepared soufflé cups. Place cups in a large baking dish and add enough boiling water to reach halfway the sides of the soufflé cups.
Bake for 20 minutes. Serve immediately, with warm vanilla sauce.

Next round of stimulus checks could include vacation credit

Next round of stimulus checks could include vacation credit stimulus checks

The COVID-19 pandemic has certainly been rough on both the economy and the tourism industry. A senior White House advisor recently suggested that the chances of a Phase Four stimulus package is “very, very high.” A second stimulus check would benefit many Americans who were hurt financially by the economic lockdown. Stimulating the economy is a necessity to help businesses recover, which is why the next round of stimulus checks may also include a vacation tax credit.

The “Explore America” tax credit is one of several proposed subsidies that tourism industry lobbyists are pitching to policymakers as the early contours of a new economic stimulus package begin to take shape in Washington. President Trump is in favor of the “Explore America” tax credit.

The tax credit would be a great benefit even though the federal government committed trillions of dollars to stop the economic damage caused by the pandemic. However, they will have to spend even more to help pull the tourism industry back to its feet. Tori Emerson Barnes, a lobbyist for the U.S. Travel Association, went on to say:

“We are grateful to the president for hearing our call for a national effort to get Americans traveling again as the country shifts into the recovery phase.”

Some of the members of the U.S. Travel Association include the Walt Disney Co. and Comcast Corp.’s Universal Parks & Resorts. Also, Roger Dow, CEO and President of the U.S. Travel Association, issued the following statement in regards to the proposed tax credit:

“An ‘Explore America’ tax credit and campaign will do wonders to put America back on the path to prosperity. We applaud the president’s support, and with our industry’s health and safety guidance for the reopening of travel businesses in place, we are very prepared to work with the administration to push the effort forward at the right time.”

No official word yet in regards to when the second wave of stimulus checks will arrive, but we will provide updates when new information becomes available. Both the stimulus checks and vacation tax credit would help give a boost to the recovery rate of the tourism industry.
