#DisneyMagicMoments: Cooking Up the Magic — First Time on Disney Parks Blog – Recipe for Totchos from Woody’s Lunch Box at Disney’s Hollywood Studios – YEEHAW!

My partner in all things Disney food, Alex Dunlap, recently shared the delicious Grilled Three-Cheese  Sandwich recipe from Woody’s Lunch Box at Disney’s Hollywood Studios. Guess what else Woody packed in his lunch box that’s easy to make at home? Potato barrels coated with
beef and bean chili, gooey queso sauce, and crunchy corn chips finished with sour cream and a sprinkle of green onions – Yep, TOTCHOS!

Super simple and highly recommended to make for watching “Toy Story” on Disney+. If feeling the need for even more cheese, how about making Grilled Three-Cheese Sandwiches AND Totchos for a Toy Story marathon? Sounds perfect to me!

Totchos from Woody’s Lunch Box at Disney’s Hollywood Studios

Totchos from Woody’s Lunch Box at Disney’s Hollywood Studios

Serves 6

Chili with Beans

  • 1 pound lean ground beef
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, drained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon coarse salt
  • Black pepper, to taste
  • Ground cayenne, to taste

Queso Sauce

  • 2 cups jar cheese sauce
  • 1 (10 ounce) can diced tomatoes with chilies

Totchos

  • 1 (2 pound) bag frozen potato
    barrels
  • 1 1/2 cups corn chips
  • Chili with Beans
  • Queso Sauce
  • 3/4 cup shredded cheddar cheese
  • 6 tablespoons sour cream
  • 2 tablespoons thinly sliced green onions

For Chili with Beans:

  1. Brown ground beef in a 5-6
    quart Dutch oven over medium heat until fully cooked. Drain off excess grease.
  2. Add onion and garlic and
    sauté for 5-7 minutes, until onion is translucent.
  3. Add crushed tomatoes, tomato
    sauce, kidney beans, chili powder, and cumin. Simmer for 20 minutes. Add salt.
  4. Add black pepper and
    cayenne, as needed.
  5. Keep warm until ready to
    serve.

For Queso Sauce:

  1. Place cheese sauce and diced
    tomatoes with chilies in small saucepan. Cook over low heat for 10 minutes,
    until warm.
  2. Keep warm until ready to
    serve.

For Totchos:

  1. Cook potato barrels
    according to package instructions.
  2. Divide potato barrels into 6
    bowls. Place 1/4 cup each of corn chips, chili with beans, and queso sauce on
    top of each bowl of potato barrels.
  3. Top each bowl with 2
    tablespoons shredded cheese, 1 tablespoon sour cream, and 1 teaspoon green
    onions.

Note: This recipe has been converted from a
larger quantity in the restaurant kitchens. The flavor profile may vary from
the restaurant’s version. As a reminder while preparing this recipe, please
supervise children who are helping or nearby.

#DisneyMagicMoments: Runners who Inspire Us – Part 3

Heather Yang

Here is another #DisneyMagicMoment from the Walt Disney World Marathon Weekend a few months ago, Heather Yang’s incredible story of hope and perseverance …

In 2018, Heather Yang was training to run her first half marathon when she was blindsided by a stage 3 colon cancer diagnosis. The disease derailed Yang’s training and led to five months of chemotherapy, but as a United States Army veteran and a first responder during the Sept. 11 tragedy, she knew she had the strength and determination to fight for her life.

In March 2019, Yang completed chemotherapy and began a new journey as a cancer survivor, which included getting back to one of the things she loves most –running. In January 2020, that love of running and eight months of training led to her fulfilling a dream when she completed the Walt Disney World Half Marathon.

Planning Your Disney Parks Vacation

An update from Guest Relations at the Walt Disney World Resort and Disneyland Resort

Dear Guests,

It’s an understatement to say that the past few months have been a challenging time for us all.  As we navigate the longest park closures in our histories, we’ve loved hearing your kind words of hope and seeing how you’ve made your own Disney memories at home has uplifted and inspired us all.

During this time, we know it can be difficult to plan your Disney vacation. Now more than ever we’re longing for the opportunity to come together with family and friends to escape, to celebrate, to re-do missed milestones, like birthdays and anniversaries and to make new Disney memories.

Given the current uncertainty as to when we will reopen Disneyland Resort or Walt Disney World Resort, we’ve had to periodically adjust the schedule for the ability to book hotel reservations at our resorts. While we’re currently accepting reservations starting in July 2020 at both resorts, as this situation evolves, timing may continue to shift.

As we continue to follow guidance from government and health care officials regarding how we’ll be able to reopen our parks and resorts in a responsible way, we may also need to make real-time adjustments to booked experiences, park tickets and park passes.

Please know that if any reservations you may have made need to change, we will work with you to make the necessary modifications.

BREAKING NEWS! Universal Orlando Resort Proposes Reopening Date

Walt Disney World Resort, Universal Orlando Resort, and SeaWorld have been closed since March due to the current global health situation.

Universal

The state of Florida is currently in “Full Phase One” of reopening its economy. It’s within this phase that both Universal Orlando’s CityWalk and Disney Springs have started a phased reopening while the theme parks have remained closed until further notice. Today, however, in a meeting of the Orange County Economic Recovery Task Force, Universal Orlando Resort has presented a plan for its reopening, including a proposed reopening date.

Universal Orlando Resort has proposed a reopening date of June 5th, 2020 to the general public. John Sprouls proposed a gradual capacity reopening for team members beginning June 1st and 2nd and to AP’s June 3rd and 4th. The proposed June 5th opening would be for the rest of the public.

Details about what a reopening would look like are being shared at this time and will be updating you with all the info — stay tuned! 

Universal Orlando

The task force approved the proposal. Orange County Mayor Jerry Demings must sign off on Universal’s proposed plans before they will be presented to Florida Governor Ron DeSantis. Demings has said that he will need 24-48 hours to review the plans before submitting them to DeSantis.

Islands of Adventure Main Entrance

Walt Disney World and SeaWorld have not yet presented reopening plans to the Orange County Economic Recovery Task Force. Amanda Dukes, a reporter at WESH TV, NBC Orlando, said that Disney World is “not submitting a plan to the Orange County Economic Recover Taskforce yet and does not have a date to do so.” When they do, they will be required to submit a proposed reopening date within their plans.
